Note: After the show was over, I actually braised the roast for a few hours at 200 degrees, because it was a little too tough. Now, it's fall apart tender! If our competition didn't call for chuck roast, I would have done a ribeye for the kababs.

RECIPE:

African Hot Pepper Street Meat

  • 4 lbs beef chuck roast
  • 2 large sweet onions
  • 2 Bell peppers
  • 1 tsp no salt meat tenderizer
  • 2 tbsp seasoned salt
  • Salt to taste
  • 1/2 tsp ground black pepper
  • 4 tbsp vegetable oil
  • 4 tbsp peanut butter
  • 2 finely chopped hot peppers
  • 1 bottle beer
  • Beast Impalerz
 
North African Dukkah Roasted Vegetables

Dukkah

  • 2 tbsp each cumin and coriander seed
  • 1/2 cup sliced almonds
  • 1/4 cup black sesame seeds
  • 1/4 cup red sesame seeds
  • 1 tsp good salt
  • Freshly ground black pepper
 Vegetables
  • 1 sweet potato, cubed
  • 3 golden beets, cubed
  • 1 pound young brussels sprouts, woody stems removed, sliced in half lengthwise
  • 6 shallots, peeled and split
  • 2 tbsp Olive oil to drizzle about 2 tbsp.
  • Sea salt and ground black pepper
  • 1 can chick peas

 East African Pilau Rice

  • 2-3 tablespoons Ghee or butter
  • 1 teaspoons cumin spice
  • 1/2 teaspoon cardamom spice
  • 1/4 teaspoon curry spice
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 teaspoon pepper flakes
  • 1 medium onion chopped
  • 1/2 teaspoon smoked paprika
  • 2 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/2 teaspoon black pepper
  • 1 small jalapeno, deseeded and chopped
  • 1/2 cup cashews
  • 2 cups Basmati rice
  • 1 tomato, chopped
  • 1 small red bell pepper, chopped
  • 4 cups chicken broth or coconut milk
  • 1 1/2 tsp. salt
