Grilled Shrimp Scampi Recipe with Prosciutto Wrapped Asparagus Feast with the Beast 25

Welcome to Episode 25 of Feast with the Beast!

Did you know…

That this year, last year, EVERY year…April 29 is National Shrimp Scampi Day?!  

Luckily for us, this year April 29 has fallen on the same day as Episode 25 of Feast with the Beast!   And, as with almost every other food on the face of the earth, shrimp scampi is just as good on the grill  as it is tossed around in a pan and put over pasta.

In fact….it’s better!  Simply because it’s grilled!  

So you got it...we’re going to take advantage of this National Day and grill up some shrimp scampi, along with a couple of easy sides to make the meal complete...and maybe something to sop up some of that delicious sauce.  

AND we are also going to announce the required ingredients and deadline for submissions for our 2ND GRILL BEASTCHOPPED CHALLENGE!

12 jumbo shrimp, peeled and deveined

1/3 cup extra virgin olive oil

1/4 cup fresh lemon juice

1/4 cup dry white wine

1 tablespoon finely chopped garlic

2 tablespoons finely chopped shallots

1 tablespoon finely chopped fresh parsley

1 teaspoon salt

1/2 teaspoon freshly-ground black pepper


4 tablespoons unsalted butter

1/4 cup extra virgin olive oil

1 1/2 teaspoons finely chopped garlic

1/4 teaspoon salt

1 tablespoon fresh lemon juice

1 tablespoon thinly sliced scallions

1 tablespoon finely chopped fresh parsley

1/4 teaspoon crushed red pepper flakes


1 pound medium spears of asparagus

1 tablespoon olive oil

6-8 thin slices prosciutto

Freshly ground black Pepper

(DO NOT SALT - prosciutto is very salty on its own)
