Kafta, Grilled Greek Salad and Zucchini Baba Ganoush - Feast With The BEAST -Episode #17

Welcome to Episode 17 of Feast with the Beast!  Today I’ll be making a dish using the ingredients from Round 2 of the Grill Beast Chopped Challenge.  Let’s take a trip to the Mediterranean with some Kafta, Grilled Greek Salad and Zucchini Baba Ganoush!


  • 1 1/2 pounds lean ground beef
  • 1 medium onion, grated
  • 1/2 cup finely chopped fresh parsley
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground allspice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Zucchini Baba Ganoush:

  • 3 pounds zucchini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon tahini
  • 1/2 garlic clove, finely grated
  • Salt and Pepper to taste
  • Olive oil (for grill and drizzling)
  • Crushed red pepper flakes to garnish
  • Pita bread for serving

Grilled Greek Salad:

For the marinade:

  • Lemon juice from 2 freshly squeezed lemons
  • 5 tablespoons dry white wine
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup fresh oregano
  • 2 tablespoons fresh thyme leaves
  • 1/2 medium yellow onion, peeled and halved
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the salad:

  • Olive oil, for coating the grill grates
  • 3 medium Roma tomatoes, quartered lengthwise
  • 8 ounces halloumi cheese, cut into 12 cubes
  • 1/2 medium red onion, peeled, sliced and cut into 6 wedges
  • 3 medium hearts of romaine, halved
  • Salt and pepper
  • Kalamata olives
