Making the Hash: 
Vegetable oil
Corned beef, cooked and diced
New potatoes, cubed into bite size pieces
Yellow onion, diced
Red bell pepper, seeded and diced
Salt and pepper to taste
Chives, thinly sliced, for garnish

Making the Hollandaise Sauce:
Egg yolks
Lemon, juiced
Melted butter
Salt and pepper to taste

Poaching the Eggs:
Eggs
Apple cider vinegar
English muffins, split and toasted
