Nacho BEAST Burgers

Just when you can’t stand the thought of another bite of turkey, the Grill Beast shows you how to make his kickass Nacho BEAST Burger with all the trimmings!  It’s easy, it’s fast, and it’s absolutely delicious.  We don’t mess around when it comes to barbecuing, so let this flavor loaded burger amp up your grilling status to the next level!  It’s that good!

Burgers:
- 2 pounds ground chuck, 80% lean
- Kosher salt and freshly ground black pepper
- 8 slices Colby-Pepperjack cheese
- 4 good-quality hamburger buns
- Avocado Relish (recipe follows)
- Tomato-Chipotle Salsa (recipe follows)
- 4 pickled-jalapeno chiles, thinly sliced
- 1/2 cup coarsely crumbled blue corn tortilla chips

Avocado Relish:
- 2 ripe avocados, peeled, pitted and coarsely chopped
- 3 tablespoons finely chopped red onion
- 1 jalapeno chile, finely chopped
- Juice of 1 lime
- 2 tablespoons finely chopped fresh cilantro leaves
- Kosher salt and freshly ground black pepper
**Combine all ingredients in a small bowl

Tomato-Chipotle Salsa:
- 3 tablespoons red wine vinegar
- 2 teaspoons honey
- 1 tablespoon canola oil
- 2 teaspoons pureed canned chipotle chile in adobo
- 3 fresh plum tomatoes, seeded and finely diced
- 3 tablespoons finely chopped red onion
- 2 tablespoons finely chopped fresh cilantro leaves
- Kosher salt

**Mix together the oil, vinegar, honey and chipotle puree in a medium bowl. Add in the onions, tomatoes and cilantro and salt. Mix to combine.

Heat your grill to high and form 4 burgers, each one about 1 inch thick. Season with salt and pepper on both sides. Grill for 4-5 minutes until golden brown and slightly charred. Flip burgers and cook for another 4 minutes. 

Place 2 slices of cheese on each one of the burgers and close the lid. Cook for about 1 minute until cheese has melted.

Take the burgers off the grill and onto bun bottoms. Top the burgers with some of the avocado relish, some tomato-chipotle salsa, pickled jalapenos, and blue tortilla chips. ENJOY!
